Broiled Veggie Chips

I’ve seen veggie chips many times online and thought I’d try it.  We’ve done apple chips and kale chips (both of which have been a huge hit).  But today, I decided to clean out the soon to be unusable vegetables in my fridge by broiling various veggies into french fries.  They came out quite delightful.  Here’s how:

Slice up some carrots:

Pour olive oil and salt into a mixing bowl:

Place carrots into olive oil/salt mixture:

Place on a baking sheet:

Put into preheated oven at 400 degrees for 15 minutes:

(This step changed for me–I tried 375 for 20 minutes and 450 for 12 minutes.  Just do what works for you depending on how crispy you want them.)

Repeat with sweet potatoes:

Or eggplant:

Or whatever vegetable that suites you (or that needs to be cooked asap).

Place on a tray and chow down:

The older kids were crazy about the sweet potatoes but the eggplant not so much.
